CABBAGE AND SAUSAGE ROLLS
Cabbage is a common vegetable in many kitchens, however beside having it with ugali or making a salad, most of us don’t know what else to do with it. Here is a recipe on how to prepare cabbage rolls and sausage rolls as well.
      Cabbage rolls ingredients
v  1 head of cabbage
v  3 cups tomato juice
v  ½ litre-can tomato sauce
v  1 egg
v  ½ cup uncooked brown or white rice
v  1 packet onion soup mix
v  ½ kg mince turkey or extra lean mince beef
v  1/3 cup parmesan cheese method
v  Peel 8-12 big leaves off the cabbage and place in a micro-wave safe dish. Cover in about an inch of water and microwave on high for 2 minutes.
v  In a mixing bowl, mix tomato sauce, egg, turkey/beef, rice, onion soup mix, cheese, and mix thoroughly.
v  Grease your crock pot (slow cooker) with some cooking spray
v  Carefully place balls of the meat mixture into the middle of cabbage leaf and roll up into ball and place on bottom of the pot, seam side down.
v  Poor the 3 cups of tomato juice on the balls.
v  Cook on low for 6-8 .

Sausage rolls ingredients
v  4 sheets ready rolled puff pastry
v  1 egg
v  500g beef mince
v  500g sausage mince
v  1 small brown onion, finely chopped
v  1 small red onion, finely chopped
v  1 medium carrot, coarsely grated
v  3 cloves garlic, crushed
v  ¼ cup finely chopped fresh flat-leaf parsley
v  1 ½ tablespoons tomato sauce
v  ¼ cup (60ml)  Worcestershire sauce
v  1 tablespoon milk

Method
Ø  Preheat oven to 220c/200celcius
Ø  Line 2 large baking trays with baking paper.
Ø  Thaw puff pastry. Mix milk and egg in a small bowl and whisk.
Ø  Mix beef mince, sausage mince, onion, carrot, garlic, parsley and sauces in a large bowl.
Ø  Season with salt and pepper and divide mixture into 8 equal parts.
Ø  Lay a sheet of pastry on a flat surface. Cut sheet in half horizontally. spoon 1/8 of the mince mixture down along the long side of one pastry half, shaping mince into a long sausage shape. brush opposite long edge with a little egg mixture.
Ø  Roll up pastry to enclose filling, finishing seam side down. Brush top of log with egg mixture. Cut into 6 short pieces, seam side down on prepared tray, 2cm apart.
Ø  Bake for 25-30 minutes or until golden and cooked.
How to prepare puff pastry
Ingredients
·          225g (1 ½ cups) plain flour.
·          Pinch of salt
·          30g lard, chopped
·          125ml (1/2 cup) iced water
·          200g butter

Method
Ø  Place the flour and salt in a large bowl. Use finger tips to rub the lard into the flour until it resembles fine breadcrumbs.
Ø  Add water and use round bladed knife to stir until a dough forms. Turn dough onto a lightly floured surface and gently knead until just smooth. Cover with plastic wrap and place in the fridge for 30 minutes.
Ø  Use a lightly floured rolling pin to roll out the dough to a 10x30 cm rectangle. Lay dough on a lightly floured surface. place butter in the centre of the dough. Fold one edge over the other to enclose the butter.
Ø  Gently press edges together. Use a lightly floured rolling pin to gently flatten the butter. Roll out dough to a 10x30 cm rectangle and repeat folding process as before. Cover with plastic wrap and place in fridge for 30 mins.
Ø  Remove when ready to fill with the roll ingredients.
